Red curry soup with dumplings
An easy, spicy and fragrant red curry soup. Perfect for cold days and a tasty way to cook dumplings.
What you need:
2 tbsp neutral oil
1 clove of garlic, finely chopped
1 green onion, finely chop the white part
2 tbsp red curry paste
2 dl chicken broth
2 dl coconut cream
1/4 tsp grated ginger
5 frozen dumplings of your choice
50 g rice noodles
Toppings:
1 handful of bean sprouts
1 lime wedge
1 green onion, finely chop the green part
Fresh coriander
Red chili
How to cook red curry soup with dumplings?
Fry the garlic and the white part of the green onion in neutral oil. Add the curry paste and fry for 2-3 minutes on medium-low heat.
Add chicken broth and coconut cream. Bring to a boil. Add the grated ginger to your liking.
Add the dumplings and cook for 5 minutes.
Add the noodles and cook for another 2-3 minutes.
Blanch bean sprouts or add them last to the soup. Serve with scallions, coriander, red chili and lime.
